Cinnamon Sourdough Bread

Plan ahead: Allow time for folds and the room-temperature rise, then chill for at least 2 hours or overnight. Bake about 35–45 minutes.

Pumpkin Cinnamon Swirl Sourdough Bread

Plan ahead: Choose the same-day or refrigerator option. Both include a 2-hour basket chill; bake 40–45 minutes.

Carrot Cake Sourdough Bread

Plan ahead: After the folds and room-temperature rise, refrigerate 5–12 hours. Bake about 40 minutes.

Easy Sourdough Bread
A four-ingredient loaf made with active starter, bread flour, water, and salt. A good place to begin.
Plan ahead: Allow about 8 hours for the rise, about 55 minutes to bake, and time to cool.

Sourdough Bagel Bread

Plan ahead: Plan for an 8–12-hour first rise plus an overnight refrigerator rest after shaping. Boil, then bake 45 minutes.

A little help before you begin
Most of the waiting is the dough doing its thing.
Pick your baking day
Read the full recipe before mixing. Some loaves need an overnight refrigerator rest, while the bagels and rolls begin with a long room-temperature rise.
Measure in grams
A kitchen scale makes it easier to measure the starter, flour, and water consistently. Feed your starter early enough that it is active when you begin.
Save a slice for later
Cool bread completely before slicing. Freeze extra slices with parchment between them so you can take out just enough for toast.
