Bolognese Stuffed Spaghetti Squash

Bolognese Stuffed Spaghetti Squash is a cozy, lighter take on classic comfort food without feeling like a compromise. Roasted spaghetti squash is filled with a rich, herby meat sauce made from ground turkey or beef, tomatoes, garlic, and Italian seasoning, then topped with melty mozzarella and broiled until bubbly. It’s satisfying, flavorful, and feels a little special while still being totally doable for a weeknight. Perfect for when you want something comforting but not heavy.

Ingredients
  

  • 1 medium spaghetti squash
  • avocado oil spray or olive oil
  • 1 small yellow onion chopped
  • 2 cloves garlic minced
  • 1 lb. ground turkey or ground beef
  • 20 oz. diced tomatoes including juice
  • 1 Tbsp dry Italian seasoning
  • 2 Tbsp fresh basil leaves chopped
  • 2 tsp crushed red pepper flakes
  • 1 cup shredded fresh mozzarella
  • salt and pepper

Method
 

  1. Preheat oven to 400 degrees.
  2. Slice the squash lengthwise. Scoop out the seeds and discard.
  3. Very lightly oil the insides of each squash halve. Season with sea salt and pepper.
  4. Place the squash halves face down on a large baking sheet and bake for about an hour or until fork tender.
  5. Spray a large skillet with cooking oil and heat it on medium-high. Add onion and garlic and sauté for a couple of minutes.
  6. Next add the turkey meat and using a wooden spoon, break up the meat until no longer pink.
  7. Season with sea salt, pepper to your taste.
  8. Add in the tomatoes, Italian seasoning, red pepper flakes, basil and bring to a gentle boil.
  9. Lower the heat and simmer for 15 minutes until the sauce is reduced.
  10. When the squash is fully cooked, flip each halve over, use a fork to loosen the spaghetti “noodles” a bit, then divide the turkey sauce into each halve.
  11. Top with shredded mozzarella and broil in the oven for an additional 4-5 minutes or until the cheese has melted and it’s all bubbly.
  12. Garnish with fresh chopped basil and totally enjoy!
