Ingredients
  

  • 1 cup pure pumpkin puree
  • 2 Tbsps pure maple syrup or raw honey
  • 1/2 cup plain Greek yogurt
  • 1/2 cup almond milk
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1 tbsp chia seeds
  • 1 tsp pumpkin pie spice
  • pecans or walnuts optional topping

Method
 

  1. In a large bowl, stir together yogurt, milk, pumpkin, vanilla, and maple syrup.
  2. Stir in your oats, chia seeds, and pumpkin pie spice.
  3. Pour into 4 separate small containers or bowls and cover.
  4. Place in the fridge for 6 hours or overnight.
  5. Once you’re ready to eat, give your oats a good stir.
  6. Garnish with chopped pecans or walnuts. (optional)

Lori’s ingredient notes: Use plain pumpkin purée and rolled oats. Steel-cut oats will not soften the same way in this overnight method. The nuts are optional.

Prep ahead: Portion into the four containers before chilling for at least six hours. Give each jar a stir in the morning; add a splash of milk if it is thicker than you like.

Add something fresh: Top with berries or sliced banana just before eating.

Save some for later: Keep the jars refrigerated and add crunchy toppings only when serving. Make a small batch for the next few mornings rather than leaving a jar in a warm bag.
