Guacamole Hummus

Guacamole Hummus is the happy middle ground between creamy hummus and fresh guacamole. Chickpeas and tahini give it body, avocado adds richness, and plenty of cilantro, lemon, and lime keep it bright and fresh. Unlike traditional guacamole, this dip holds up beautifully in the fridge for days without browning, making it ideal for meal prep, entertaining, or easy snacking. It’s bold but balanced, simple to make, and just as good scooped with chips as it is spread on sandwiches or wraps.

Ingredients
  

  • 1 can garbanzo beans rinsed and drained
  • 1 large bunch cilantro
  • 2 medium garlic cloves
  • 1 ripe avocado halved, peeled and pitted
  • 2 tablespoons fresh lemon juice
  • zest of one lemon
  • 1 tablespoon fresh lime juice
  • ¼ cup tahini
  • ½ teaspoon cumin
  • 1 teaspoon sea salt
  • freshly ground black pepper to taste
  • finely chopped jalapeño optional

Method
 

  1. Combine all ingredients except olive oil in the bowl of a food processor. Process for 3-4 minutes until mixture is smooth, scraping down the bowl once or twice during the pureeing.
  2. Season to taste with more sea salt if needed and freshly ground black pepper. A sprinkle of finely chopped jalapeño is also delicious! Serve with pita chips, raw veggies or tortilla chips.
